High in the ancient highlands of East Africa, over 5,500 feet above sea level, a different kind of power is cultivated. Sourced from the Chelchele washing station in the heart of Yirgacheffe, this Grade 1, washed-process coffee is a masterclass in precision, grown in mineral-rich soil and processed with obsessive care.
Chelchele offers a clean, articulate cup with above-average acidity, a smooth, tea-like body, and moderate sweetness. The flavor is distinctly refined: expect bright lemon zest upfront, softened by a drizzle of golden honey, and grounded in the soft, dry elegance of black tea. As it cools, the citrus deepens and the sweetness blooms, leaving a lingering finish that's both delicate and radiant.
This is not your average wasteland brew, it's a moment of stillness, a beacon of craftsmanship in the ruins.
Chelchele: Bright, refined, and quietly explosive.
☢ Brew Guide
Ethiopia Yirgacheffe
Single Origin · Light / Bright
Tasting notes: lemon zest · golden honey · black tea
Dial it in: Fast and clean: bright citrus up front, honey sweetness as it cools.
House baseline: 60g : 1000ml (≈1:16.7). Keep the ratio steady — let grind do the work: finer for lighter roasts, coarser for darker. Always brew with fresh, filtered water and grind just before brewing.
Has amazing tea notes that differentiate it from the first bag. Would happily buy this again! If you are someone tired or dark roasts and want to try something new, this would be a great stepping stone as it’s familiar tasting enough.
